This is really yummy, but I give credits to Eat This, Not That! for coming up with it.
You will need 1 Cup of low fat ricotta or cottage cheese
1/2 Cup of Skim milk
2 Cups of Strawberries that are sliced(you can also use other berries)
2 Tbsps of Honey
2 Tbsps of sliced or chopped almonds
1 Tbsp of butter (low fat or even margarine if you have it)
2 Eggs
1 Cup skim milk
1/4 tsp cinnamon
1 tsp vanilla extract
8 Slices of whole wheat bread
Powdered Sugar is optional.
How to make it: -Put the ricotta (or cottage cheese), milk, strawberries (or other berries), honey, and almonds in a bowl and mix gently to combine. Set it aside.
-Heat butter or margarine in a large, non stick pan over medium heat.
Beat the eggs with the milk, cinnamon, and vanilla in a fairly small dish. One slice at a time, put the bread in the egg mix and turn it over once and then add it directly to the hot pan.
-Cook each side for 2 to 3 minutes per side, and the bread should look a nice golden color. Put the strawberry generously on the bread.
