Yes, theories are all good, and in almost all fields theories are accurate enough to be fairly sure, but it's the "100%" certain thing that's important.
Yeah, obviously Solipsism is just a technicality, and it's pretty stupid, but at the same time it can't be denied, which makes it always a possibility that we are entirely deluded about that which we think we know. Possible, not probable.

Our senses being flawed is not the same as them being 'fundamentally unreliable'. Our senses (of which there are much more than 5) evolved in a kind of in-between realm. We don't interact with the cosmologically very large, nor the atomically very small, and deal with quite slow speeds. Our senses are specialized for this realm, and in philosophy, there's this idea that our senses are 'properly basic'. They work in the areas they evolved to do well in, hence trying to acquaint them with other levels of existence is bound to fail.
